Simple and Easy Banana Bread Recipe

Banana bread is one of those classic comfort food that fills you with warmth. I have always loved it since young, always eagerly waiting for my mum to bring back a loaf of banana bread from the market. And now studying abroad made me crave for some homemade banana bread.


I have made banana bread a couple of times and I think I have found the perfect recipe. All of my friends loved my banana bread and I've been wanting to share it here in my blog.

Here is a quick and easy recipe that takes about 10 minutes to whisk together. In half an hour's time, you will be snacking away on your very own freshly baked banana bread.



HOW TO MAKE BANANA BREAD
Recipe yields 2 loaves

INGREDIENTS
  • 2-3 very ripe bananas
  • 2 eggs
  • 140g butter
  • 140g flour
  • 140g caster sugar (adjust the sweetness to your liking)
  • 1 teaspoon of baking powder
  • 1 teaspoon of bicarbonate soda

INSTRUCTIONS

  1. Pre-heat the oven 180C/160C fan. Butter your loaf tin or ceramic dish. 
  2. Beat the eggs and mash the bananas.
  3. Mix the butter and sugar until it is creamy and fluffy. 
  4. Then, add in the eggs with a little of flour and whisk.
  5. Add in the remaining flour and bananas and whisk to blend.
  6. Don't forget to add in your baking powder and bicarbonate soda and fold in well. 
  7. Pour the batter into your buttered loaf tin/ceramic dish.
  8. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. 
  9. Let it cool in the loaf tin/ceramic dish for 10 minutes.
  10. Remove your bread from the tin and slice it.
  11. Enjoy your banana bread with a cup of hot tea!
